Texas A&M Recearchers Demonstrate That Electron-Beam Pasteurization Of Raw Oysters May Reduce Viral Food Poisoning

About one in six Americans experiences at least one episode of food poisoning annually. A virus infection resulting from consumption of raw oysters in the U.S. is alone estimated to cost around $200 million a year according to Texas A&M University AgriLifeTODAY’s Paul Schattenberg, citing the Centers for Disease Control data. Schattenberg reports that results of a recent study by TAMU System personnel and others on the effects of electron beam irradiation on viruses in raw oysters will be published in the June issue of the The American Society for Microbiology’s Applied and Environmental Microbiology journal.
